process for the recovery, encapsulation and stabilization of bovine colostrum immunoglobulins Colostrum is a yellowish glandular secretion obtained after parturition. It has higher concentration of nutrients when compared to milk as well as other components (such as immunoglobulins - a, g and m, leukocytes, growth factors, hormones, cytokines and antimicrobial factors), which result in its high biological value. Considering that bovine colostrum is part of the milk production chain and that there is currently a surplus of colostrum produced by lactating cattle on rural properties, which is only partially consumed by calves, a new technology for processing this colostrum for lactation has been proposed in this invention. recovery of bioactive compounds, in particular, immunoglobulins g to be used as a nutritional supplement. In this invention a gaseous or immunoglobulin-rich product was developed using exopolysaccharide encapsulating and protective agent from a mixed culture (bacteria and yeast). The powdered product presented 78% of immunoglobulins g and could be destined to the functional and nutraceutical food market.
