Lipidicas solid nanoparticles (NLS) and nanostructured lipid carreadores (CLN) for application in food.Process for obtaining NLS and CLN and use of NLS and CLN the present invention refers to solid lipid nanoparticles (NLS) and nanostructured lipid carreadores (CLN) obtained from OEdible fats and oils and bioactive compounds, such as phytosterols, for application in food.In addition, the invention refers to a process of obtaining NLS and CLN using high pressure homogenization, hot (PAH); and its use in food products, food grade,Drugs and cosmetics, mainly in order to improve the structural properties, reduce the content of saturated fatty acids.And enrich products or food with bioactive compounds such as carreador thereof.
