The present invention relates to a method based on mass spectroscopy/spectrometry, which allows to determine precisely the origin and/or location of a foodstuff so that the foodstuff may be characterized as a Greek product of protected designation of origin (PDO), protected geographical indication (PGI), and traditional specialities guaranteed (TSG). The method comprises analysing the foodstuff by mass spectroscopy/spectrometry, forming the molecular and/or trophometric footprint of the foodstuff, comparing that with respective reference footprints and finally characterizing the origin and/or location of the product. The method may be applied on all kinds of foodstuffs including liquid foodstuffs, solid foodstuffs of animal or plant origin, dairy products, honey etc.
