The invention relates to a process for producing an assortment of hen's eggs enriched in polyunsaturated omega-3 fatty acids. According to the invention, the process consists in feeding TETRA egg-laying hens of 38 weeks with a combined fodder based on conventional fodder enriched with 6% flaxseed grist and 2% grapeseed grist, having a content of 18.10 % raw protein, 17.12 g of α linolenic acid/100 g of total fatty acids, 17.38 g polyunsaturated omega-3 fatty acids/100 g of total fatty acids and 2800 kcal metabolisable energy/kg, to harvest, after two weeks, eggs having in their yolk a concentration of 5.41 g total polyunsaturated omega-3 acids/100 g of total fatty acids, 1.67 ± 0.05 g of α linolenic acid/100 g of total fatty acids, 3.26+- 0.12 g of α docosahexaenoic acid/100 g of fatty acid, 0.26 ± 0.01 g of docosapentaenoic acid/100 g of total fatty acids.
