The invention discloses a method of extracting pectin from mango peels. The method includes the preparation of the mango peels for extraction. This involves washing and draining the mango peels followed by oven drying, milling and sieving. Extraction of pectin from the milled mango peels comprises acid treatment, filtration, and precipitation with acidified alcohol, purification by washing with alcohol and drying.
