Extract from carob pulp and containing 15-30% of condensed tannins, between 25-50% of lignin, between 10-20% of sugars, between 2-5% of fiber and proteins and less than one 10% humidity This composition gives lipid lowering properties, lowering cholesterol and triglyceride levels, being able to be used as a food supplement, as a nutraceutical or as an active ingredient with pharmaceutical characteristics. The process of obtaining is based on the crushing of the carob pulp without seeds, then a wash in water to extract most of the sugars present, subsequent filtering and extraction by means of a solution of water, acetone: water or ethanol: water. Finally, the liquid extract is concentrated by removing the water by evaporation, the product obtained being crushed to a suitable size.
