Provided is a method for producing a dispersion that includes: a step A of preparing a mixture containing an edible pigment, an edible dispersant, and water; a step B of applying hydrostatic pressure of 30 MPa or more to the mixture; and a step C of subjecting the mixture to which the hydrostatic pressure has been applied to a dispersion treatment. Also provided are a pigment dispersion for inkjet printing and a method for producing the same, and an inkjet ink composition and a method for producing the same.
