The present invention relates to the heterologous expression, purification and insertion into dental products of a recombinant sugarcane cystatin for reducing erosive tooth wear and protecting against dental cavities, denominated CaneCPI-5. Said cystatin is of great importance in the dental sector due to its inhibitory activity against cathepsin B and, as a result of being an acid-resistant protein, when incorporated in the acquired tooth enamel film, may protect the tooth structure from acid attack, whether by acid of microbial origin or not of microbial origin, by preventing dissolution thereof, increasing resistance to erosive tooth wear.
