The present invention relates to a method for preparing strains of Saccharomyces cerevisiae as yeast strains. More specifically, the method for preparing strains of Saccharomyces cerevisiae as yeast strains includes the steps of: mixing sodium alginate in a concentration rate of 1-3% (w/v) with mycelium to prepare a strain solution (S1); spraying a calcium chloride solution to the strain solution to prepare calcium-alginate beads (S2); and immersing the calcium-alginate beads in a drying-protection composition before drying the calcium-alginate beads with a blow dryer. The yeast strains prepared by using the method have an improved survival rate.
