The present invention relates to a sauce containing an eel extract and a method for preparing seasoned eel using the same and, more specifically, to a sauce containing an eel extract such as an eel head and an eel bone extract. The method for preparing seasoned eel comprises: an eel dressing step of removing a head and bones or an eel; a fishy smell removal step of removing a fishy smell by putting the eel dressed through the eel dressing step into a heating container and mixing mirim and refined rice wine while heating the eel; a seasoning ingredient mixing step of mixing the eel, from which the fishy smell is removed through the fishy smell removal step, with a mixture of broth, soy sauce, sugar, apples, and pears; a heating step of heating the eel mixed with the ingredient ingredients through the seasoning ingredient mixing step; a slow cooling step of slowly cooling the eel heated through the heating step; and a sauce coating step of coating a sauce containing the an eel extract on the eel cooled through the slow cooling step. The sauce and the seasoned eel prepared through the above steps have improved palatability by removing a fishy smell, and exhibit effects of stamina enhancement, cardiovascular disease alleviation, gastrointestinal protection, and aging prevention by containing abundant nutritional ingredients.
