The present invention relates to a fermented soy preparing method. The fermented soy preparing method includes the steps of: (a) soaking black beans in water and cooling the soaked black beans; (b) kneading the cooled black beans, barley powder, and water for soaking the black beans; (c) shaping the kneaded dough to prepare a soy product, drying the skin of the soy product away from direct sunlight, and fermenting the soy product for 3-10 days to prepare a fermented black soy product; (d) adding 70-120 parts by weight of bamboo salt water, 10-30 parts by weight of green tea leaves or sprouts of Artemisia Linne cut in the length of 1-2 cm, 1-10 parts by weight of the green tea or Artemisia Linne extract as an alternative option of the previous ingredient, 5-20 parts by weight of loess germanium balls, 1-10 parts by weight of chili peppers, 1-10 parts by weight of jujube, and 5-20 parts by weight of charcoal with respect to 100 parts of the fermented black soy product to prepare a mixture; and (e) fermenting the mixture from step (d). The fermented soy product has a low sodium content to minimize adult diseases such as high blood pressure as well as having high polyphenol content for exhibiting high antioxidative effect.;COPYRIGHT KIPO 2018
