The present invention relates to a method for evaluating the quality of rice, which accurately evaluates taste of rice by developing the formula having a high determination coefficient, wherein the method comprises the following steps: (a) obtaining germination rate information of brown rice and calculating the prediction value of quality of brown rice; (b) obtaining quality factor information of white rice and calculating the prediction value of quality of white rice; and (c) evaluating the quality of rice in a comprehensive manner by applying weights to predicted values of the brown rice and the rice white.
