The present invention relates to a recycled aggregate production system with an aggregate quality management function and a method thereof which allow recycled aggregate to maintain a uniform particle size distribution at all times by alleviating a problem where particle sizes of produced recycled aggregate vary by the strength of waste concrete which is construction waste. The method of producing recycled aggregate using a recycled aggregate production system with an aggregate quality management function comprises: a step of firstly crushing construction waste (waste concrete) aggregate to a size of 200 mm; a step of secondly crushing the firstly crushed aggregate of the size of 200 mm to a size of 100 mm or less; a step of thirdly crushing the secondly crushed aggregate of the size of 100 mm or less at a high speed; a step of sorting the thirdly crushed aggregate by particle size; a step of sampling the recycled aggregate sorted by particle size; and a step of analyzing the quality of the sampled aggregate, and intelligently and automatically adjusting the gap of a cone cave and mantle of the third crusher in accordance with the analysis result.
