The present disclosure relates to methods of treating at least one symptom of a subject's mental disorder or a disease of the central nervous system by modulating the amount of GABA produced in the subject's gut. The present disclosure also relates to methods of cultivating new bacterial strains. Also disclosed are methods of identifying bacterial strains capable of producing GABA and manipulating the strains to produce GABA. The disclosure also describes methods of identifying bacterial strains capable of producing, for example, GABA under physiologically relevant conditions, such as, for example, physiologically relevant pH.
