For cutting meat slices (100), whose cross-section varies in its longitudinal course, for pieces of precise weight (101), it is known prior to cutting to take the slice (100) into a mold tube (2) by pressing, to a defined shape with uniform cross-section by length. According to the invention, the pressing takes place in longitudinal direction (1,10) and transverse direction (q, 11) in a predetermined sequence and especially in various pressing steps (+ q, + l), which also comprise relief strokes (- q, -1) to, on the one hand, lower the force application to the pressing and, on the other hand, to maintain the tissue structure of the slice (100).
