The present disclosure is related to a process for obtaining protein hydrolysates from marine animals, particularly tuna (Thunnus albacares), where the by-products generated during the tuna processing are a good source of protein for obtaining protein hydrolysates; with a suitable proximal content to be applied in the agro-food industry. Where the alcalase enzyme at 1.5 and 3% in dark muscle had the highest percentages of protein, (73.1 ± 1.4% and 73.2 ± 2.4%, respectively) comparable with those of dark muscle treated with the crude extract of tuna proteases at 1 and 1.5% (70.8 ± 0.4% y 73.1 ±3.6% respectively). The dark muscle of yellowfin tuna is outlined as a suitable by-product to obtain protein hydrolysates, this is due to the fact that a high yield of hydrolysate is obtained from this raw material, and in addition, its content of ashes, lipids and proteins are within the limits established for fish protein hydrolysates.
