The present invention describes a process for the fermentation of substrate mixtures which predominantly contain animal manure, in particular horse manure. The task is solved by increasing the dry residue in the fermenter. As a result, the fermenter can be made smaller with the same dwell time and the sand contained in the animal manure does not sediment in the fermenter. Solutions for problems that occur especially in biogas plants that primarily ferment animal manure, in particular horse manure, are also described. These include the problem of poor degassing of the fermenter content as well as the separation of a fine-viscous, highly viscous process water from the sandy fermentation substrate of a biogas plant, which mainly fermentes tiremist, especially horse manure.
