A pressure and temperature processing circuit and a pressure thermometer. The pressure and temperature processing circuit comprises: a pressure and temperature measurement unit for measuring pressure and temperature signals; a pressure and temperature processing unit connected to the pressure and temperature measurement unit and used for processing the pressure and temperature signals measured by the pressure and temperature measurement unit; and a main control unit connected to the pressure and temperature processing unit and used for reading and calculating the pressure and temperature signals processed by the pressure and temperature processing unit. The pressure thermometer comprises: a pressure and temperature processing circuit, a probe rod (316) and a probe (3). The pressure and temperature processing circuit is integrated into an integral pressure thermometer, and by means of the circuit design, the pressure and the temperature are detected simultaneously, the output of NPN and PNP switch quantities and the output of voltage and current analog quantities are realized, and a self-resetting button is loaded thereon. Controlling, by means of programming, parameters for the output of NPN and PNP switch quantities and the output of voltage and current analog quantities enables the present invention to be more useful for industrial application and to be easy to popularize.
