The present invention relates to the processing of a fluid containing single-cell or multi-cell organisms, such as bacteria, yeasts, fruit and vegetables or pieces of fruit and vegetables, for the purposes of juice extraction and/or decontamination, and more particularly harvested grapes, juice apples and cider apples, in order to improve not only the extraction yields in terms of juice, but also in terms of solutes contained in the plant cells, using pulsed electric fields which are characterised in that the duration of each pulse is controlled either by the temperature of the fluid leaving the module so as not to exceed a predetermined maximum temperature or by the maximum intensity of the current emitted or received by the generator.
