The present invention relates to a composition of an insect jerky using edible insects and a production method thereof and, more specifically, to a production method comprising the steps of: grinding edible insects; kneading the ground product with tapioca starch, wheat flour, sugar, refined salt, and water; and molding and drying the kneaded product. The present invention reduces consumer resistance to an edible insect food and produces a texture similar to animal meat. In addition, the present invention is intended to help expand an area of an edible insect industry through attempts to commercialize a new product using the edible insects.;COPYRIGHT KIPO 2019
