The present invention relates to a method for preparing black rice vinegar using black rice and black rice vinegar obtained therefrom. More specifically, the present invention relates to black rice vinegar with improved palatability and functionality by diluting a fermented product prepared by using black rice, adjusting the sugar content and acidity with a sugar fermentation solution to adjust the solid-acid ratio, and then fermenting the same with acetic acid, and to a method for preparing the same. According to the present invention, black rice vinegar prepared by adjusting the solid-acid ratio using sugar fermentation solution for a fermented product prepared using black rice has improved chromaticity to enhance palatability, and preserves the antioxidant activity of black rice, and thus is beneficial for health.;COPYRIGHT KIPO 2019
