The present invention relates to a method of producing solid food products using edible insects. The method comprises: a step of drying mealworms; a step of roasting the mealworms and nut fruits; a step of mixing the roasted mealworms and aged lotus roots in a mixing ratio of 1 : 1 to produce a main composition; a step of mixing the main composition and a nut fruit composition in a mixing ratio of 2 : 1.5 to produce a solid composition; a step of mixing the solid composition with syrup to produce a moldable composition; a molding step of shaping the moldable composition; a freezing step of cooling the shaped moldable composition to a temperature of -18 to -20°C; and a cutting step of cutting the frozen moldable composition.
