Compositions and methods for the perception and mood improvement of adult human subjects are presented herein. The methods of the invention include the administration of a dietary supplement comprising a plant polysaccharide. The compositions described herein have beneficial effects on memory performance and high cognitive demands, irrespective of blood glucose response and mental fatigue.
