The present invention relates to a red ginseng or/and a red ginseng extract obtained by ultrasonic and ultra-high pressure treatment of ginseng (undried ginseng), and steaming and drying the same, and a preparing method thereof. In addition, the present invention relates to a whole ginseng composition including a red ginseng extract prepared by the method, a ginseng leaf and ginseng berry extract, and a preparing method thereof. The red ginseng and red ginseng extract obtained by the ultrasonic and ultra-high pressure treatment according to the present invention has a lower maximum stress than that of the conventional red ginseng concentrate in terms of physical properties not only to reduce the inconvenience of ingestion and storage but also to increase the content of the active ingredient. Further, the whole ginseng composition including all the red ginseng extract, the ginseng leaf extract and the ginseng berry extract has the improved extraction efficiency of ginsenoside, which is a functional substance in red ginseng, by ultrasonic and ultra-high pressure treatment of the preparing process of red ginseng. The content of ginsenoside is considerably higher than that of the conventional red ginseng extract, and the composition is superior in terms of physical properties compared to the products containing the existing red ginseng extract alone. The composition can use the leaves and berries of ginseng, a ginseng by-product which has not been used well before.
