The process for treating crude or liquid digestate resulting from a phase separation step leaving an anaerobic digestion unit comprises: a step of passage of air in or on the surface of said digestate contained in a tank to extract at least one ammonia to the atmosphere of the tank and - a step of passage of the atmosphere of the tank in a treatment system. In embodiments, the method comprises a step of reinjecting the digestate after passage of air, to the material preparation system. In embodiments, the method comprises, after the step of air passage in or on the surface of said digestate, a step of passing biogas into said tank to reduce the pH of the digestate.
