The invention relates to a process for preparing an olive extract with a melanin content greater than 5% by weight of the total weight of the extract. The invention is characterized in that said method comprises the following steps of:- mixing a raw material from the olive with an aqueous alkaline solution;maceration of the mixture obtained;filtration of the macerate;- mixing an acidic compound with the filtrate obtained;filtering the mixture in order to obtain a wet cake;- drying the wet cake; andrecovering a solid extract comprising a melanin content greater than 5% by weight relative to the total weight of the extract.
