Methods for demethylating opioids to nor-opioids are provided. The method includes contacting the opioid with at least one enzyme. Contacting an opioid with the at least one enzyme converts the opioid to a nor-opioid. Methods for converting nor-opioids to null-opioids are provided. The method includes contacting a nor-opioid with at least one enzyme. Contacting a nor-opioid with the at least one enzyme converts the nor-opioid to a nal-opioid.
