The present utility model relates to a process of producing spicy mango fruit leather that will generate nutritious dried fruit product having a special sweet-spicy taste to thereby increase consumption and marketability. The process of producing spicy mango fruit leather comprises the steps of: a. preparing mangoes and peppers; b. cleaning mangoes; c. transforming the mangoes into puree; d. deseeding the peppers; e. chopping the deseeded peppers into homogenous consistency; f. mixing mango puree and chopped peppers with sugar and acid according to their predetermined proportions; g. precooking the mixture for 20 minutes in medium low fire; h. allowing the precooked mixture to cool down; i. drying the cool mixture in a tray at 55-60øC for 10-18 hours until leathery form is determined; and j. wrapping the dried mixture in a cloth and left overnight for sweating.
