The invention relates to a method for germination in a hydroponic medium, in which cereal seeds are brought into contact with water, in the presence of lactic acid, at a temperature of between 19°C and 24°C, for a period of between 3 days and 8 days. This method can be carried out with an automatically controlled continuous germination device (1) comprising - a plurality of germination tanks (2), divided up according to at least two different stages; - means (3) for conveying these tanks (2); - storage means, placed in communication with seed intake means and also with means for supplying a liquid, intended to be brought into contact with the seeds; - transfer means (6) capable of transferring an amount of seeds from the storage means to a respective tank (2), comprising a mobile transfer member (62), which can be moved between a collecting position, in which it is in the vicinity of the storage means, and a dispensing position, in which it is in the vicinity of a respective tank (2); - control means capable of controlling all or part of the conveying means (3), of the storage means and of the transfer means (6).
