An aerosol quenching device, and a test system and test method for an interfacial heat transfer coefficient of a part. The aerosol quenching device comprises an accommodating cavity consisting of a plurality of plates; a rotating component (7) is mounted between the two opposite plates in the accommodating cavity; and a nozzle is installed and fixed at the rotating component (7), wherein an angle between the nozzle and an axis of a workpiece (13) can be adjusted; and workpiece clamping holes are formed in some plates forming the accommodating cavity and are used for fixing the workpiece (13) after the workpiece is placed (13). The angle of the nozzle can be changed; and quenching situations at different angles between the nozzle and the axis of the workpiece (13) can be obtained.
