Provided is a method for producing decellularized extracellular matrix (dECM)-hydrogel using a salivary gland tissue isolated from an individual. By using the dECM-hydrogel according to the present invention, it is possible to effectively produce a salivary gland organoid through the 3D culture of salivary gland stem cells, and the salivary gland organoid can be useful for the treatment of xerostomia.
