The present invention relates to a method for producing juniper extract containing quercetin and a catechin compound using subcritical water. More specifically, the method for producing juniper extract containing quercetin and a catechin compound using subcritical water contributes to technology development by: making an organic solvent collecting process unnecessary since there is no organic solvent extracting process; enabling an easy access as an environmentally friendly cosmetic material since there is no risk of residual organic solvent in the final extract; ensuring human body safety; being extractable with an environmentally friendly process; increasing production efficiency by shortening time required to processes; reducing processing costs; and helping the use range of extract groups which can only rely on organic solvent extraction to be expanded by controlling specific pressures and temperatures in a subcritical water converting step and a subcritical water extracting step and controlling the state of water to have similar solubility as conventional organic solvent groups. The present invention comprises a raw water purifying and feeding step, a preheating step, a subcritical water converting step, a phase balance maintaining step, a subcritical water extracting step, and a filtration and deodorization step.
