The present application relates to a novel heat-resistant amylosucrase enzyme and an enzymatic preparation method of amylose using the same, and more specifically, high-temperature and heat-resistant new amyloid having excellent thermal stability confirmed the optimum pH and optimum temperature of each enzyme. It relates to a rosucrase and a method for preparing amylose using the same.
