The present invention relates to a mainstream fermentation system to which a complex neural network algorithm is applied to precisely control the fermentation process of a traditionalism of a parallel fermentation method in which saccharification and alcohol fermentation are simultaneously performed, thereby producing liquor according to a desired purpose without abnormal fermentation. In order to brew liquefaction, saccharification and alcohol fermentation while the yeast is in operation, various state information of the fermenter is analyzed through a complex neural network algorithm, and the current fermentation state is analyzed in correspondence with the entire fermentation process and goals to control temperature and timing.
