PROCESS FOR FISHING FIRST FISH IN WHICH FLAVOR IS LIKELY TO DEGRADE DURING TIME

摘要

Process for the raw casing of fish, such as tuna, whose organoleptic properties, such as flavor, are liable to deteriorate over time, comprising the following successive steps: a preparation step (3) of said fish; a step of filling (4) a container with said fish; a crimping step (5) of said container; and a sterilization step (6) of said container. According to the invention, the method further comprises an additional step preceding the filling step, during which the fish is brought into contact with an auxiliary composition comprising salt and water.
