Tooling for forming wafers (10) from a food mass comprising: - a tray (11); an impression (12) arranged to be received in the impression tray, the impression being made of a porous material against a fluid and having an internal face (123) delimiting a formation mold of a wafer (121) and an outer face (122) separated from the inner face by a porous material thickness; - A clamping means (13) of the impression in the tray; and, an interposed seal (14, 15, 17) between the impression and one of the impression tray and the clamping means, the seal being arranged to constrain the passage through the thickness of porous material of a pressurized fluid, brought on the external face, from the latter to the inner face.
