The production of smoked seafood, and in particular smoked salmon, has increased considerably over the past ten years in the majority of the top ten producing countries, according to the United Nations' Food and Agriculture Organisation (FAO). Table 1illustrates that production in Germany and Spain has increased by a massive 300%, and production in France, USA and Italy by 100%. France has retained its position as number one producer since 1994 and now produces over 23,000 tonnes per year. The UK held second place in 1994 but production has failed to rise in the interim period, and it now lies in fourth place with a production of just under 11,000 tonnes per year. Total world production of smoked salmon rose from 57,000 tonnes in 1994 to 87,000 tonnes in 2004.
