SYDNEY'S REDFERN IS TAKING CENTRE STAGE IN THE POPULARITY GAME AND SO IS KOREAN CUISINE, WITH THE FORMER ROUGH END OF TOWN NOW GRACED WITH THE PLEASURES OF MOON PARK, AS YASMIN NEWMAN REPORTS.FOR years it has been on the verge of culinary stardom. Like the rock star predicted as the next big thing but superseded by another hopeful, Korean fare never quite made it to the front stage of the concert. Until now, that is.What Korean food in Australia lacked, it seems, was a front man, one that could strum out pop tunes for the masses, but with layers of finesse to capture the aficionados and critics. Moon Park is its name and its scores are resonating far and wide.Partners Ben Sears and Eun Hee An bring all the right credentials. Hee An, born in Korea, moved to Australia in her late teens and met head chef Sears working the stoves at now-closed Sydney fine-dining institution Claude's. On their days off, the duo would eat home-style Korean fare, made in their own kitchen or at the smattering of Korean joints around town. At work, they refined their technique under maestro Chui Lee Luk.
