Exotic foods a growing market. Whether it's restaurants that serve dishes with an Asian flair or the number of grocery stores specializing in so-called "ethnic" foods from the Caribbean, the Middle East, and South and Central America, exotic cuisines are playing an increasingly important role in Canada's food trends. A study carried out by Agriculture and Agri-Food Canada's Food Bureau paints a picture of Canada's main ethnic groups, highlighting the influence they could have on our food industry.According to the report, the demand for ethnic foods is growing and Canada's agri-food industry is responding. The ethnic groups studied represent nearly three million people in Canada whose food expenditures total more than 6-billion dollar annually, including more than 400-million dollar spent in specialty stores. The variety of imported ethnic food products is influencing the tastes and preferences of consumers across the country.
