EMULSION CAPACITY AND FOAM STABILITY OF RE‐EXTRACTED SUNFLOWER MEAL (Helianthus annuus)

ABSTRACTEmulsification and foam stabilization attributes of residual lipids in hexaneextracted sunflower meal were determined. Reextraction with various solvents did not markedly affect emulsifying capacity. Methanol washing increased foam stability.
