ABSTRACTA study was conducted to compare the quality of the effluent and canned spinach, turnip greens, and mustard when washed by experimental and industrial washing systems. Three 4‐hr runs were conducted on spinach and one each on turnips and mustard greens. The effluent from the industrial washing system was significantly higher in total suspended solids, total solids, suspended solids, chemical oxygen demand, and nitrates than that from the experimental washer. Washing system has very little effect on quality of canned spinach. The major differences in quality were caused by cultivar and age of raw product.
