Occurrence of hormones, hormone mimics and hormone antagonists in foods is reviewed. Aspects considered include: mammalian sex hormones; oestrogens; androgens and progestins; occurrence of steroid hormones in foods (e.g. beef, pork, poultry, dairyproducts, eggs, fish, cereals, vegetables and drinking water); occurrence of steroid hormone precursors in food; non-steroid dietary hormone mimics or antagonists; isoflavones (flavonoids, coumestans, lignans and phytosterols) and other food constituents (e.g. corticosteroids, indole-3-carbinol and protein hormones) with hormonal activity; influences of diet on human endocrine functions; and residues and contaminants (e.g. mycoestrogens and environmental oestrogens) exhibiting hormonal or hormone-blocking activity.
