ABSTRACTThermal resistance was determined on a strain ofBacillus coagulansin double concentrated tomato paste (aw= 0.95 at 23°C, pH = 4.0, 30.3°Brix, 70.1 moisture and acidity 1.30 g/100g citric acid.
