Reduction of Nitrate in a Meat System by Lactobacillus plantarum

1Lactobacillus plantarumin commercial lactic acid starter cultures used to ferment meat products reduced nitrate to nitrite in sterile meat. The nitrite reacted with the meat myoglobin to yield nitrosylmyoglobin.
