摘要

Anthocyanin profiles of Tempranillo wines made with grapes from 2 different vineyards in Rioja Alta were studied by HPLC during ageing in oak barrels and storage in stainless-steel tanks. Multifactorial analysis of variance was carried out on the resulting data, taking into account several factors, including: vineyard; age of wines; type of wine (free run wine and a coupage of free run wine and press wine); and type of container (oak barrels or stainless-steel tanks). Results indicate that both length of ageing or storage and the vineyard where the grapes were grown affect the anthocyanin profiles of wines. The impact of the other 2 factors was relatively low, despite the differences observed in several spectroscopic parameters related to colour and phenols contents.
