Triple-quadrupole LC–MS–MS for quantitative determination of nitrofuran metabolites in complex food matrixes

5-Nitrofuran drugs have been widely used as feed additives to prevent bacterial enteritis in animals. Many food imports have recently been rejected by European authorities, because significant amounts of nitrofuran residues had been detected. It was discovered that residues of nitrofuran antibiotics occurred in fish products, for example shrimp and catfish, originating from South-East Asian countries. More intensive monitoring subsequently revealed the same residues could also be found in different meats (e.g. poultry, swine, cattle, duck, and rabbit) imported from this region.
