This study combines the derived mathematical models with the denaturation of nutrient's model to calculate the temperature distribution, the level of the sterility and the denaturation of nutrients for the liquid medium and the different radii of carrot particles in the continuous steam injection sterilizer. The denaturation of three different kinds of nutrients, vitamin B-1, vitamin B-12 and beta-carotene is also discussed. The effects of sterilization temperature on the sterilization and the denaturation of nutrients for the various particle sizes and nutrients are also investigated. According to those results the cooling section is a controlling step in the sterilization process for the radius of the carrot particle exceeding 6 mm. Among these nutrients, vitamin B-1 is most sensitive to the high temperature. By cumulatively considering residence time in the sterilization process, the level of sterility, the nutrient remaining and economic point of view, the optimum ranges of sterilization temperature are from 140 degrees C to 150 degrees C.
