摘要

Muscadine grape berries were collected at 10-day intervals after post-anthesis. Berries were separated into skin, pulp and seed and analysed for total phenols and antioxidative activity. Seed phenols content increased during berry development but decreased during veraison, whereas phenols level in pulp decreased during berry development. Skin phenols content decreased between 33 and 44 days post-flowering but remained relatively constant during the rest of berry maturation. Phenols accumulation was found to be significantly different (P <0.05) among muscadine cultivars. Seed antioxidative activity varied significantly (P <0.05) among muscadine cultivars but increased during berry development and decreased during berry ripening.
