Coffee sludge is in large quantities and is a waste worldwide, and its use is limited. As it contains some substances such as triglycerides, proteins, mineral salts, cellulose and hemicelluloses, our study focuses on the use and as an additive to wheat bran in the production of the enzyme alpha-amylase. The enzyme alpha-amylase produced by Aspergillus oryzae is widely used in the food, textile and chemical industries, pharmacy and medicine. Analyses show that coffee sludge can be successfully used as part of the growth medium of Aspergillus oryzae, and even alone as a medium. In addition, there is no significant difference between the activities of the enzyme on the two types of media.
