摘要

In today's modern trending lifestyle, health, hygiene, regulations and safety are key factors that play a pivotal role in the life of the people. In order to satisfy all these needs, the food management systems are certified through various international certification bodies. Food Safety standards are evolved and addressing key requirements like safety, quality, legality and integrity of the food products. Jaggery is one of the largest and ancient cottage industry of unorganized sector in India. Jaggery making plants are generally small in size and the machineries of the plants are fabricated by local artisans or engineering workshops. Being decentralized and unorganised, the jaggery industry has not flourished much and the product is still being produced majorly by adopting traditional ways, lacking in quality and hygiene. Jaggery sector is one of those industry that need to be very conscious about the food safety and quality compliances as it is considered as a natural nutritive sweetener, enriched with goodness of sugarcane crop. In wake of Covid-19 pandemic, the demand of such natural nutritious products have also paved way for better enhancement of processing and packing techniques for a sustainable market. The paper highlights the importance of certification in jaggery processing.
